Pineapple Ginger Cigarillos
I haven't spent anytime on sweets lately so I thought I would create a fruity, crispy treat with a tropical twist. Pineapple and ginger compliment each other, The ginger gives a little bite to the pineapple and the pineapple sweetens and mellows the ginger.
These cigarillos are great for dessert, but I really enjoy mine with a cup of strong coffee as a nice breakfast or an addition to brunch.
Ingredients
2 cups of fresh pineapple
2 teaspoons of pureed ginger
3 tablespoon of brown sugar
1 tablespoon of butter
1/4 teaspoon of salt
12 egg roll wrappers
1 egg white
1/3 cup of coconut oil (canola or vegetable oil also works)
Preparation
Dice the pineapple into small pieces (1/4 inch or smaller). Melt the butter in over medium heat in a skillet. Stir in the brown sugar. Add the pineapple, pureed ginger and salt. Soften the pineapple mixture over medium heat for 7 to 10 minutes.
Set aside the mixture and allow it to cool.
Place 2 tablespoon of the pineapple mixture in each egg roll wrapper. Fold the sides, roll and seal the edge by brushing with egg whites. Heat the oil to 350 degrees in a deep skillet or chicken fryer. Fry the stuffed cigarrillos for 1 minute or until golden.
