Tropical Crunch Bars
The summer months are active times for everyone. A friend asked me for a quick recipe for an on the go snack. While granola type snacks usually aren't my thing, I decided to make an effort to come up with a relatively healthy, granola based snack bar.
While I used a combination of dried tropical fruits, you can substitute any type of dried fruit and nut mixture in this recipe. You can even substitute a pre-made trail mix.
Ingredients
1 cup of honey
1 teaspoon of salt
2 tablespoons of water
1 cup granola (I prefer the whole grain rolled oats style)
1/4 cup of dried diced papaya
1/8 cup of peanut pieces
1/8 cup of chocolate chips
1/4 cup dried pineapple pieces
1/4 cup of crumbled dehydrated bananas
1/4 cup of sweetened shredded coconut
1 tablespoon of butter
Preparation
Set asides the coconut.Combine the granola, fruits, peanuts and chocolate chipsin a mixing bowl. Grease a 9 x 13 pan with the tablespoon of butter.
In a sauce pan heat the honey, salt and water to a low boil. Fold the heated mixture into the dry ingredients and spread evenly on the 9 x 13. Sprinkle the top with the shredded coconut. Allow to cool and slice into bars.
